Make Delicious Blueberry Muffins



This is my favorite blueberry muffin recipe, and I always get compliments on it. It has a llittle bit of orange rind and juice that give it a hint of citrus.

Ingredients:
1/4 C. light brown sugar
1 3/4 C., 2 T. flour
1 T. butter
1/3 C. oatmeal
1 t. vanilla extract
2 t. baking powder
1/4 t. baking soda
1/3 C. sugar
2 t. orange rind
2 T. orange juice
3 T. oil
3/4 C. buttermilk (if you don't have buttermilk, add a little bit of lemon juice to milk)
1 egg

1. Heat your oven to 400 degrees.
2. Mix the brown sugar, 2 T. flour, and softened butter. Add the oatmeal, vanilla extract and stir.
3. Mix 1 3/4 C. flour, baking powder, baking soda, sugar and orange rind.
4. In a separate bowl, mix the orange juice, milk, oil and egg.
5. Mix the dry and wet ingredients together. Gently fold in the blueberries.
6. Fill the muffin tins 2/3 full and bake for 20-25 minutes.
